| Description | Full participation cooking classes featuring popular Southwestern dishes such as tamales, tacos, enchiladas and more innovative and contemporary dishes and cooking techniques are taught.The history and culinary applications for major ingredients such as chiles and corn are completely detailed. Many families and friends come to enjoy this full participation culinary experience as well as to learn the tips and techniques for delicious cooking made much easier. Such tips and techniques as to which knife to use for what and how best to keep knives in tip top condition is always taught.
The school, established in 1983 has garnered many awards such as being one of the four best non-vocational cooking schools in the world by Bon Appetit magazine and the best hotel based cooking school in the US and one of the 10 bet in the world by Gayot.com. Classes are conducted regularly in Jane Butel's professional kitchen in Corrales, NM, adjacent to Albuquerque, NM and 45 minutes south of Santa Fe, NM. Class size is small, with 12 students a maximum. Also conduct Culinary tours to Oaxaca, Mexico
